  • 1 lb. zucchini or squash (approximately 2 medium-sized)
  • 1/4 cup shredded parmesan (heaping)
  • 1/4 cup Panko breadcrumbs (heaping)
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • Freshly ground pepper (to taste)
  • Vegetable spray (for coating)

Instructions:

1. Preparation:

  • Preheat your oven to 400°F (200°C).
  • Line two baking sheets with aluminum foil and lightly spray them with vegetable spray to prevent sticking.

2. Prepare the Zucchini:

  • Wash the zucchini or squash thoroughly.
  • Trim the ends off and slice them into 1/4 inch-thick rounds using a sharp knife. Try to make the slices as even as possible for uniform cooking.
  • Place the sliced rounds in a mixing bowl, drizzle with olive oil, and toss gently to coat evenly.

3. Prepare the Coating:
