Ingredients:

  • 1 1/2 pounds skirt steak, cut into 1/2-inch pieces
  • 12 mini flour tortillas, warmed
  • 3/4 cup diced red onion
  • 1/2 cup chopped fresh cilantro leaves
  • 1 lime, cut into wedges

Instructions:

  1. Prepare the Marinade:
  • In a medium bowl, combine the soy sauce, lime juice, 1 tablespoon of canola oil, minced garlic, chili powder, cumin, and oregano. Whisk together until well blended.
  1. Marinate the Steak:
  • Place the skirt steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Seal the bag or cover the dish, and refrigerate to marinate. For optimal flavor, marinate for at least 1 hour, but for a more profound taste, leave it for up to 4 hours. If possible, turn the steak occasionally to evenly distribute the marinade.

Pour in the remaining marinade halfway through cooking, allowing it to reduce and coat the steak.

  • Warm the flour tortillas and keep them wrapped in a clean cloth to stay warm. Slice the cooked steak into smaller pieces, if desired. Divide the steak evenly among the tortillas. Top each taco with diced red onion, fresh cilantro, and a squeeze of lime juice.
