Homemade Calabaza con Puerco

This delicious and hearty Calabaza con Puerco features tender pork, colorful vegetables, and a flavorful tomato-based sauce. It’s perfect served with rice, beans, and warm tortillas.


Ingredients

  • 1 1/2 pounds boneless pork sirloin steaks, cut into 1-inch pieces
  • 3/4 teaspoon salt (adjust to taste)
  • 3/4 teaspoon cumin
  • 3/4 teaspoon fresh cracked pepper
  • 1 cup water (divided for cooking and blending)
  • 2 tablespoons avocado or grapeseed oil (or pork lard)
  • 2 cloves garlic, sliced
  • 1 cup white onion, diced
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup green bell pepper, sliced
  • 1 medium zucchini, sliced into rings or half-moons
  • 3 large roma or vine-ripe tomatoes, roughly chopped
  • 1 tsp tomato/chicken bouillon (optional, Knorr brand recommended)
  • 1/2 tsp Mexican oregano
  • 1 cup corn (fresh or frozen)
  • 1 tbsp cilantro, chopped (for garnish)

Directions

  1. Prepare the Pork:
    Heat a large skillet over medium/high heat. Add the pork pieces, seasoning them with salt, pepper, and cumin. Add 1/2 cup of water, cover, and cook until the water evaporates and the pork becomes tender.
  2. Browning:
    Once the water evaporates, uncover the skillet and add the oil. Cook the pork, uncovered, to brown it slightly and enhance its flavor.
  3. Sauté Vegetables:
    Add the garlic, onions, and bell peppers to the skillet. Cook for 3-4 minutes, stirring frequently, until the vegetables soften.
  4. Prepare the Tomato Mixture:
    In a blender, combine the chopped tomatoes, Mexican oregano, and bouillon (if using). Add 1/2 cup of water to facilitate blending and blend until smooth.
  5. Combine and Simmer:
    Add the corn to the skillet and cook for 2 minutes. Pour in the blended tomato mixture and stir well. Add the zucchini and cilantro, then reduce the heat to low/medium. Let everything simmer for 10-15 minutes until the vegetables are tender and the flavors meld.
  6. Final Adjustments:
    Taste and adjust the seasoning with additional salt if needed.
  7. Serve:
    Serve the Calabaza con Puerco with rice, beans, salsa, and warm tortillas.
