Ingredients
- 2 lbs baby red potatoes (or substitute with Yukon gold potatoes)

Instructions
- Preheat the Oven:
Set your oven to 475°F, using the convection setting if available. Place a large rimmed baking sheet inside to heat up as you prepare the ingredients. - Prepare the Potatoes:
Scrub the baby red potatoes under running water, then cut them into 1–1½ inch pieces.

Roast for 20-30 minutes, or until the vegetables are tender and golden brown, turning halfway through. For extra browning and crispness, consider broiling for the last few minutes. - Garnish and Serve:
