Fried Potatoes and Onions/Peppers with Smoked Sausage

This hearty dish features tender potatoes, savory smoked sausage, and a mix of colorful vegetables, all roasted together for a comforting, flavorful meal.


Ingredients

  • 2 lbs baby red potatoes (or substitute with Yukon gold potatoes)
  • 1 large onion, sliced into thick half-circles
  • 1 red bell pepper, cut into 1-inch pieces
  • 8 oz smoked sausage or kielbasa, cut into 1-inch pieces
  • 8 oz fresh mushrooms, halved or quartered
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon fresh thyme
  • 1 tablespoon spice/herb blend (such as Italian seasoning or a mix of dried basil, oregano, and rosemary)
  • Salt and ground black pepper, to taste
  • Fresh herbs for garnish (parsley, thyme, chives, or dill), finely minced

Instructions

  1. Preheat the Oven:
    Set your oven to 475°F, using the convection setting if available. Place a large rimmed baking sheet inside to heat up as you prepare the ingredients.
  2. Prepare the Potatoes:
    Scrub the baby red potatoes under running water, then cut them into 1–1½ inch pieces.
    Place the potatoes in a medium pot, cover with water, and bring to a boil. Reduce heat and simmer, covered, for about 5 minutes or until halfway cooked. Drain well.
  3. Prepare Other Ingredients:
    Slice the mushrooms in half or quarters depending on size. Slice the onion and bell pepper as directed, and cut the sausage into 1-inch pieces.
  4. Mix Vegetables and Sausage:
    In a large bowl, combine the onion, bell pepper, mushrooms, olive oil, garlic, thyme, and spice/herb blend. Season with salt and pepper. Add the par-cooked potatoes and sausage, tossing everything until well-coated.
  5. Roast:
    Carefully remove the preheated baking sheet from the oven and quickly spread the potato mixture in a single layer on the hot sheet.
    Roast for 20-30 minutes, or until the vegetables are tender and golden brown, turning halfway through. For extra browning and crispness, consider broiling for the last few minutes.
  6. Garnish and Serve:
    Once roasted, remove from the oven and immediately garnish with freshly minced herbs. Serve hot.

Make-Ahead Tips
You can prepare and combine all the ingredients in the bowl ahead of time. Cover and refrigerate for up to 2 days. When ready to serve, preheat the oven and the baking sheet, then spread the mixture on the hot sheet and follow the roasting instructions.
