Creole-Style Shrimp and Sausage Gumbo

This hearty and flavorful gumbo is a comforting dish with smoky sausage, tender shrimp, and okra in a rich, flavorful base. Perfect for a family dinner!

Ingredients

  • 2 cans (14 oz each) stewed tomatoes
  • 1/4 pound reduced-fat smoked sausage, sliced
  • 1 red bell pepper, chopped
  • 1 clove garlic, peeled and minced
  • 1/8 teaspoon crushed red pepper
  • 1/2 pound fresh sliced okra
  • 3/4 pound medium shrimp, peeled and deveined
  • Salt, to taste
  • 3 cups cooked rice, warm

Method

  1. Prepare the Base:
In a 6-quart slow cooker, combine the stewed tomatoes, sliced sausage, chopped red bell pepper, minced garlic, and crushed red pepper. Stir to evenly distribute all ingredients.
  2. Slow Cooking:
Cover the slow cooker and set it to cook on low heat for 6-7 hours. This allows the flavors to meld and the sausage to become tender. About 30 minutes before the end of the cooking time, add the sliced okra to the slow cooker. Okra will thicken the gumbo slightly and add texture. Ten minutes before serving, add the shrimp to the slow cooker to cook quickly, preserving its tender texture.
  3. Serving:
Once the cooking time is complete, taste the gumbo and adjust the salt as needed. Serve the hot gumbo over warm cooked rice, allowing the rice to soak up the rich sauce.

Enjoy this delicious Creole-Style Shrimp and Sausage Gumbo for a comforting meal that’s full of flavor!
