Ingredients
For the Carne Guisada:

  • 4-6 Roma tomatoes
  • 1/4 cup beef broth
  • 4-5 chiles de arbol
  • 1 medium onion, diced
  • 3 medium yellow potatoes, cubed
  • 1.5 lbs steak, cut into bite-sized pieces and coated in cornstarch

Seasonings (adjust to taste):

  • Cumin
  • Salt
  • Garlic powder
  • Black pepper

For the Rice:

  • 1 cup rice (toasted)
  • 1/2 onion, finely chopped
  • 2 cups water
  • 1 cube tomato bouillon
  • Garlic powder, onion powder, and salt to taste

Directions

  1. Prepare the Sauce: In a blender, combine the Roma tomatoes and chiles de arbol. Blend until smooth. Pour the mixture into a bowl and stir in the beef broth and seasonings (cumin, salt, garlic powder, and pepper). Set aside.
  2. Cook the Steak: Heat a large skillet over medium-high heat. Add a little oil and sauté the cornstarch-coated steak pieces until browned on all sides (about 3-4 minutes per side).
  3. Combine Ingredients: Pour the tomato-chile sauce over the browned steak. Add the diced onions and cubed potatoes to the skillet.
  4. Simmer: Reduce the heat to medium-low and cover the pan. Simmer for about 20 minutes or until the potatoes are tender and the sauce has thickened slightly. Stir occasionally to prevent sticking.
  5. Adjust Seasonings: Taste the stew and adjust salt and other seasonings as needed.
  6. For the Rice:
  • Toast the Rice: In a saucepan, toast the rice over medium heat until lightly golden, stirring frequently.
  • Cook the Rice: Add the chopped onion to the rice and sauté until translucent. Stir in the water, tomato bouillon, garlic powder, onion powder, and salt. Bring to a boil, then reduce the heat to low. Cover and cook for about 18 minutes, without lifting the lid.
  • Finish the Rice: After 18 minutes, check the rice. If the water has been absorbed and the rice is tender, remove from heat. Let it sit covered for a few minutes, then fluff with a fork.
  1. To Serve: Serve the carne guisada hot alongside the rice. Canned beans can also be served as a side dish.

Enjoy your flavorful and hearty Carne Guisada con Chile de Arbol with perfectly cooked rice!
