Ingredients:

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 tsp minced garlic
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4.5 oz diced green chile peppers
  • 16 oz refried beans
  • 8 oz tomato sauce
  • 10 oz enchilada sauce
  • 15 oz chili no-beans (e.g., Hormel)
  • 6 flour burrito tortillas (about 12 inches in diameter)
  • 2 cups shredded lettuce
  • 3 cups shredded Mexican blend cheese
  • Chopped green onions (for garnish)
  • Optional: Additional toppings such as diced tomatoes, sour cream, or sliced avocados

Instructions:

  1. Preheat the Oven:
  • Set your oven to preheat at 400 degrees Fahrenheit.
  1. Prepare the Beef Mixture:
  • In a medium skillet, brown the ground beef and chopped onions over medium-high heat until the beef is thoroughly cooked and the onions are soft.
  • Drain any excess grease from the skillet.
  • Add minced garlic, cumin, salt, and pepper to the beef. Stir well to combine.
  • Mix in the diced green chilies and refried beans. Continue to stir until the mixture is well blended and heated through. Remove from heat and keep warm.

  • In a separate saucepan, combine the tomato sauce, chili without beans, and enchilada sauce.
  • Use a whisk to blend the sauces together smoothly.
  • Cook over medium heat until the sauce is warm. Remove from heat and keep warm.

  • Lay a tortilla flat on a clean surface.
  • Spoon one-sixth of the beef and bean mixture onto the center of the tortilla.
  • Add a sprinkle of cheese and some shredded lettuce to your taste (you can leave the lettuce out if preferred, or replace it with other vegetables like diced tomatoes or bell peppers).
  • Fold the tortilla over the filling from the left and right sides, holding the folds in place. Then fold the top and bottom to fully enclose the filling, ensuring it overlaps well and no filling escapes.
  1. Bake the Burritos:
  • Grease two 9×13 inch baking dishes and place the folded burritos seam side down in the dishes.
  • Pour the prepared sauce evenly over the burritos in both dishes.
  • Sprinkle the remaining shredded cheese over the top of the sauced burritos.
  • Bake in the preheated oven for 15-20 minutes, or until the burritos are hot throughout and the cheese has melted.

  • Serve hot, garnished with additional lettuce, chopped green onions, and any other desired toppings like sour cream, diced tomatoes, or sliced avocados.
