Pineapple Cake Bars Recipe

Ingredients:

For the Crust and Topping:

  • 1 ½ cups all-purpose flour
  • ¾ cup cold butter, cubed
  • ½ cup sugar
  • A pinch of salt

For the Filling:

  • 16 oz can crushed pineapple, drained
  • ½ cup sour cream
  • ½ cup flour
  • 1 cup sugar
  • 2 large eggs
  • A pinch of salt

For the Icing:

  • 1 cup powdered sugar
  • 2 tablespoons half and half (adjust as needed for desired consistency)
  • 1 teaspoon coconut extract

Instructions:

  1. Prepare the Oven and Pan:
  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Grease a 9×13-inch baking dish with butter or non-stick spray.
  1. Make the Crust:
  • In a large bowl, mix 1 ½ cups flour, ½ cup sugar, and a pinch of salt.
  • Add the ¾ cup of cubed cold butter to the flour mixture. Use a pastry cutter or two forks to cut the butter into the flour until the mixture is crumbly.
  • Reserve 1 cup of this crumb mixture for the topping.
  • Press the remaining mixture into the bottom of the prepared baking dish to form a firm crust.
  • Bake the crust in the preheated oven for 15 minutes or until it is lightly golden. Remove from oven and allow to cool slightly.
  1. Prepare the Filling:
  • In another bowl, combine the crushed pineapple, sour cream, ½ cup flour, 1 cup sugar, two eggs, and a pinch of salt. Mix until all ingredients are well incorporated.
  • Pour this filling over the pre-baked crust, spreading evenly.
  1. Add Topping and Bake:
  • Sprinkle the reserved 1 cup of crumb mixture evenly over the top of the pineapple filling.
  • Return to the oven and bake for about 1 hour, or until the topping is golden brown and the filling is set.
  1. Prepare the Icing:
  • While the bars are cooling, prepare the icing by whisking together 1 cup powdered sugar, 2 tablespoons half and half, and 1 teaspoon coconut extract in a small bowl. Adjust the thickness by adding more half and half if needed.
  • Drizzle the icing over the cooled bars.
  1. Serve:
  • Let the bars cool for at least 15-20 minutes before slicing.
  • Cut into desired sizes and serve.
