Pineapple Cake Bars Recipe
Ingredients:
For the Crust and Topping:
- 1 ½ cups all-purpose flour
- ¾ cup cold butter, cubed
- ½ cup sugar
- A pinch of salt
For the Filling:
- 16 oz can crushed pineapple, drained
- ½ cup sour cream
- ½ cup flour
- 1 cup sugar
- 2 large eggs
- A pinch of salt
For the Icing:
- 1 cup powdered sugar
- 2 tablespoons half and half (adjust as needed for desired consistency)
- 1 teaspoon coconut extract
Instructions:
- Prepare the Oven and Pan:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Grease a 9×13-inch baking dish with butter or non-stick spray.
- Make the Crust:
- In a large bowl, mix 1 ½ cups flour, ½ cup sugar, and a pinch of salt.
- Add the ¾ cup of cubed cold butter to the flour mixture. Use a pastry cutter or two forks to cut the butter into the flour until the mixture is crumbly.
- Reserve 1 cup of this crumb mixture for the topping.
- Press the remaining mixture into the bottom of the prepared baking dish to form a firm crust.
- Bake the crust in the preheated oven for 15 minutes or until it is lightly golden. Remove from oven and allow to cool slightly.
- Prepare the Filling:
- In another bowl, combine the crushed pineapple, sour cream, ½ cup flour, 1 cup sugar, two eggs, and a pinch of salt. Mix until all ingredients are well incorporated.
- Pour this filling over the pre-baked crust, spreading evenly.
- Add Topping and Bake:
- Sprinkle the reserved 1 cup of crumb mixture evenly over the top of the pineapple filling.
- Return to the oven and bake for about 1 hour, or until the topping is golden brown and the filling is set.
- Prepare the Icing:
- While the bars are cooling, prepare the icing by whisking together 1 cup powdered sugar, 2 tablespoons half and half, and 1 teaspoon coconut extract in a small bowl. Adjust the thickness by adding more half and half if needed.
- Drizzle the icing over the cooled bars.
- Serve:
- Let the bars cool for at least 15-20 minutes before slicing.
- Cut into desired sizes and serve.
