For Assembling the Sandwiches:
- 1 to 2 large loaves French bread (or toasted buns, if preferred), sliced into sandwich lengths
- Provolone cheese slices (enough to cover the sandwiches)
- Mushrooms (optional), sautéed for topping
Instructions:
1. Prepare the Slow Cooker:
- Lightly spray the inside of your slow cooker with cooking spray to prevent sticking.

- Add the sliced green peppers and onions on top of the beef.
- Pour in the beef stock to cover the ingredients.
- Sprinkle garlic salt, black pepper, and dry Italian dressing mix evenly over everything.
3. Cooking:
- Cover the slow cooker and set it to cook:
- On low for 7 to 8 hours for tender meat.
- On high for 3 to 4 hours if you need it quicker.
4. Assemble the Sandwiches:
- Once the meat is tender and cooked, use tongs to transfer the meat and vegetables to the sliced French bread or toasted buns.
- Layer slices of Provolone cheese on top of the hot meat and vegetables.
5. Melting the Cheese:
- Place the open-faced sandwiches on a baking sheet.
- Broil in the oven for a few minutes, just until the cheese is bubbly and slightly golden.
6. Serve:
- If desired, top each sandwich with sautéed mushrooms for added flavor and texture.
- Serve hot and enjoy!
Additional Tips:
- Variations: Customize the sandwiches with additional toppings such as sautéed bell peppers, jalapeños for heat, or a splash of Worcestershire sauce for extra flavor.
