Ingredients:
- 1/2 pound raw shrimp, peeled and deveined
- 2 salmon fillets (4-6 ounces each)
- 6-8 ounces grated Parmesan cheese
- 1 pint heavy whipping cream
- 1 tablespoon Prego Basil Pesto
- 1 stick butter
- 2 tablespoons seasoning salt
- 2 tablespoons Old Bay seasoning
- 1/4 teaspoon black pepper
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 3/4 box penne pasta
- 2 teaspoons minced garlic
- 1/8 teaspoon chili powder
- Fresh parsley, finely chopped for garnish
Instructions:
- Prepare the Seafood:
- Wash the shrimp and salmon, then pat them dry. Season both the shrimp and salmon evenly with the seasoning salt, black pepper, onion powder, garlic powder, chili powder, and Old Bay seasoning. Set aside.
- Cook the Pasta:
- Cook the penne pasta according to package instructions until al dente. Once cooked, drain the pasta and set it aside.
- Cook the Shrimp:
- In a skillet, melt 1 tablespoon of butter over medium heat. Add the seasoned shrimp and cook for about 3 to 4 minutes on each side, until they are pink and slightly golden. Remove the shrimp from the skillet and set aside.
- Cook the Salmon:
- In a clean skillet, add another tablespoon of butter and place over medium heat. Add the salmon fillets and cook for about 7-8 minutes on each side, or until they are thoroughly cooked and have a golden crust. Remove from the skillet and set aside.
- Prepare the Alfredo Sauce:
- In a large pan, melt the remaining 6 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy whipping cream and stir well. Add the basil pesto and continue to stir.
- Gradually add the grated Parmesan cheese to the cream mixture, stirring continuously. Season the sauce with additional salt, pepper, onion powder, garlic powder, and Old Bay. Continue cooking and stirring until the sauce begins to thicken, approximately 3-5 minutes.
- Combine Pasta and Sauce:
- Add the cooked penne pasta to the sauce, ensuring that the pasta is fully coated with the sauce. Adjust seasoning if necessary. Sprinkle in a pinch of fresh chopped parsley and mix thoroughly.
- Serve:
- To serve, plate the creamy pasta. Top with a salmon fillet, followed by a portion of the cooked shrimp. Garnish with additional fresh parsley and a sprinkle of Parmesan cheese.
