Ingredients:
For the Skillet:
- 4 tablespoons olive oil, divided for cooking and tossing noodles
- 1/2 large white onion, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 lb lean ground beef
- 1 red bell pepper, sliced thinly
- 2 cups broccoli florets, diced
- 3/4 cup carrots, cut into matchsticks
- 3 packages instant ramen noodles (discard seasoning packets)
For the Sauce:
- 2 teaspoons cornstarch
- 3 tablespoons light soy sauce
- 1/3 cup chicken broth
- 2 teaspoons toasted sesame oil
- 1 tablespoon light brown sugar
- 1 tablespoon rice vinegar
- 2 tablespoons hoisin sauce
- 2 teaspoons Sriracha sauce (adjust for heat)
- 1/4 teaspoon black pepper
For Serving:
- Green onion, minced
- Sesame seeds
Preparation:
- Prepare the Sauce:
- In a small bowl, whisk together all the sauce ingredients (cornstarch, soy sauce, chicken broth, sesame oil, rice vinegar, hoisin sauce, Sriracha, and black pepper) until smooth. Set aside.
- Cook the Aromatics:
- Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add the sliced onions and cook until soft and translucent, about 4-5 minutes.
- Reduce the heat to medium, add the garlic and ginger, and stir for about 15 seconds until fragrant. Push the mixture to the side.
- Brown the Ground Beef:
- Increase the heat to high, then add the ground beef to the skillet. Let it sit undisturbed for about 30 seconds, then break it apart with a spoon. Cook until browned and no longer pink.
- Cook the Ramen Noodles:
- Meanwhile, bring a large pot of water to a boil. Add the ramen noodles and cook for about 1 1/2 minutes less than the package directions. Drain and toss the noodles with 1 tablespoon olive oil to prevent sticking. Set aside.
- Cook the Vegetables:
- Return the skillet to medium-high heat and add the bell pepper, broccoli, and carrots. Cook, stirring occasionally, for 3-4 minutes until vegetables are crisp-tender.
- Combine and Finish Cooking:
- Stir the sauce and pour it over the vegetables in the skillet. Add the pre-cooked ramen noodles. Toss everything together, using tongs to ensure the noodles and vegetables are evenly coated. Cook for another 2-4 minutes until the sauce thickens.
- Serve:
- Transfer the skillet contents to a serving dish. Garnish with minced green onion and sesame seeds. Serve hot and enjoy!
Tips:
- Adjust the spice level by increasing or decreasing the Sriracha according to your preference.
- Feel free to customize the vegetables with alternatives like snap peas, mushrooms, or spinach.
