Puff Pastry Danishes

Ingredients

For the Puff Pastry:

  • 1 sheet puff pastry (homemade or store-bought), rolled and cut into 9 squares

For the Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg yolk (reserve the white for later use)
  • 1 tsp lemon juice

For the Egg Wash:

  • 1 egg white
  • 1 tsp water

Optional Filling:

  • Raspberry preserves (or any fruit preserves of your choice)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/4 tsp vanilla extract

Directions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C) to ensure it’s hot enough for the pastry to puff up perfectly.
  2. Prepare the Cream Cheese Filling:
    In a medium mixing bowl, combine the softened cream cheese, granulated sugar, egg yolk, and lemon juice. Mix until smooth and creamy. Set aside.
  3. Prepare the Egg Wash:
    In a small bowl, beat the reserved egg white with 1 teaspoon of water until frothy. This will help give the pastries a golden sheen after baking.
  4. Prepare the Puff Pastry:
    Lay out the puff pastry squares on a baking sheet lined with parchment paper. Using a fork, gently prick holes in the center of each square to prevent puffing up too much during baking.
  5. Add the Fillings:
