Ingredients
- 1 1/2 pounds boneless pork sirloin steaks, cut into 1-inch pieces
- 3/4 teaspoon salt (adjust to taste)
- 3/4 teaspoon cumin
- 3/4 teaspoon fresh cracked pepper
- 1 cup water (divided for cooking and blending)
- 2 tablespoons avocado or grapeseed oil (or pork lard)
- 2 cloves garlic, sliced
- 1 cup white onion, diced
- 1/2 cup red bell pepper, sliced
- 1/2 cup green bell pepper, sliced
- 1 medium zucchini, sliced into rings or half-moons
- 3 large roma or vine-ripe tomatoes, roughly chopped
- 1 tsp tomato/chicken bouillon (optional, Knorr brand recommended)
- 1/2 tsp Mexican oregano
- 1 cup corn (fresh or frozen)
- 1 tbsp cilantro, chopped (for garnish)

- Prepare the Pork:
Heat a large skillet over medium/high heat. Add the pork pieces, seasoning them with salt, pepper, and cumin. Add 1/2 cup of water, cover, and cook until the water evaporates and the pork becomes tender. - Browning:
Once the water evaporates, uncover the skillet and add the oil. Cook the pork, uncovered, to brown it slightly and enhance its flavor. - Sauté Vegetables:
Add the garlic, onions, and bell peppers to the skillet. Cook for 3-4 minutes, stirring frequently, until the vegetables soften. - Prepare the Tomato Mixture:
In a blender, combine the chopped tomatoes, Mexican oregano, and bouillon (if using). Add 1/2 cup of water to facilitate blending and blend until smooth. - Combine and Simmer:
